ROCK CAKE

Ingredients

• 1/4 lb. flour
• 1 oz. butter
• 1 oz. sugar
• 1 egg
• 1 oz. currants
• 1/4 oz. candied peel
• 1/4 teaspoonful spice
• 1/2 teaspoonful baking powder
• 1 dessertspoonful milk
• pinch of salt

Method

Grease a baking sheet. Sift the flour, baking powder and salt together. Put this into a vessel. Add the butter and rub the butter into the flour with the finger tips till it becomes like coarse bread crumbs. When rubbing the fat into the flour, let them fall from the finger tips through the air.

Next, add sugar,spice, currants and peel. Beat egg with milk and add to dry mixture. Take two forks and drop the mixture in rough heaps on the tin tray. Bake in hot oven for ten minutes.
